Continuing on my Breakfast for Dinner review feature from Monday, here is part 2 of my attempts at some of the delicious recipes in the cookbook Breakfast for Dinner by Lindsay Landis & Taylor Hackbarth.
Lemon Poppy Seed Thumbprints
Breakfast for…. dessert? Yum. These were delicious. The combination of sweet cookie and slightly sour lemon curd was a perfect combination. Make sure you give yourself enough time because, as with the Loco Moco recipe from the other day, I didn’t read all the instructions from the get-go and didn’t realize the curd needed to set in the fridge and cool for 2 hours. I could have either made a bit more curd or put a little less in each of the cookies because I ran out for the last four in the batch. Overall, even though the cookie itself became a bit crumbly, it was extremely well received. the sweetness of the cookie with the slightly tart taste of the lemon curd makes for a yummy treat!
Garlic Bagel Chips
One of the best discoveries when making this recipe was realizing how delicious regular “Everything” bagels are! What I quickly realized though was that this works best on bagels that aren’t already pre-sliced. My “chips” ended up being wedges once I cut them into 1/4-inch pieces. I also didn’t have a big enough bowl to put 4 sliced bagels to “toss” with the ingredients so I cut the recipe in half. Probably could have coated everything more with the olive oil and garlic powder but it’s pretty good. Fairly quick and easy to make. There’s also an additional recipe for a cream cheese/artichoke/sundried tomatoes dip that I’ll have to try another time.
